MAKING FERMENTED 
CUCUMBER JUICE

 

PREP:
 

  • Wash cucumbers thoroughly to remove any dirt and impurities.

  • Slice cucumbers into thin rounds or sticks, depending on your preference.

PREPARE THE BRINE:

 

  • In a large mixing bowl, dissolve 2 tablespoons of sea salt in 1 quart of non-chlorinated water.

  • Stir until the salt is completely dissolved.

 

PACK JARS:

  • Place a few garlic cloves and sprigs of fresh dill at the bottom of the fermentation jar (optional).

  • Pack the cucumber slices or sticks tightly into the jar, leaving about 1-2 inches of headspace at the top.

ADD BRINE: 

  • Pour the prepared brine over the cucumbers, ensuring they are completely submerged.

  • Leave about 1 inch of headspace at the top of the jar to allow for expansion during fermentation.

WEIGH DOWN CUCUMBERS:

  • Place fermentation weights or clean stones on top of the cucumbers to keep them submerged in the brine.

SEAL

  • If using a fermentation jar with an airlock lid, seal the jar and attach the airlock.

  • If using a mason jar, cover it with a lid but do not tighten it completely, allowing gases to escape.

  • Alternatively, cover the jar with cheesecloth or a clean kitchen towel and secure it with a rubber band.

ALLOW TO FERMENT:

  • Place the jar in a cool, dark place (around 65-75°F or 18-24°C) to ferment.

  • Allow the cucumbers to ferment for 3-7 days, depending on the desired level of fermentation. Taste periodically to check the flavor

DAILY MONITORING:

  • Check the jar daily to ensure the cucumbers remain submerged and to release any built-up gases if not using an airlock.

  • Taste the cucumbers after a few days. When they reach the desired tanginess, they are ready.

STORAGE

  • Once the cucumbers are fermented to your liking, remove the weights and garlic/dill (if used).

  • Transfer the fermented cucumbers to clean jars, cover them with brine, and seal tightly.

  • Store in the refrigerator to slow down the fermentation process.

NOW ENJOY!

  • Your fermented cucumber juice is now ready to drink. Shake well before serving, as some sediment may settle at the bottom.

  • Consume within a few weeks for the best flavor and probiotic benefits.
